Yummy Cupcakes!

This is the result of this recipe!

They're pretty good! I don't know if they are particularly... Amaretto-y. But they're pretty tasty. Sweet, too. I was mostly excited to try a vegan frosting because I haven't yet found a good one. But this is pretty good! It's more of a crusting buttercream, I just used vegan margarine instead of butter.

Man, it's a bit "grittier" and sweeter than a meringue buttercream, but still so yummy.

Vegan Fondant Flowers

It's kind of a lazy flower, actually. Just roll out some fondant and cut out some flowers with a flower cutter. Then I like to roll a tiny ball and press it against the surface of a sieve, to get a bumpy texture for the middle of the flower!

The vegan fondant was extra sticky and has a weirder texture... kind of like a Japanese mochi. It's definitely odd.

To make this, buy some marshmallows (or vegan ones, in this case) and melt them down however you like. Add a tiny spoonful of glucose (or corn syrup, because who has glucose?) and a whole bunch of icing sugar.

(Sugar isn't really "vegan" depending on how strict you are... Though if you get your sugar from Ontario, you're good.)

Just keep adding icing sugar until you get a nice dough, not too soft or sticky. Wrap it in plastic and store in an airtight container. It has a pretty good shelf life at room temperature! The decorations will harden if left uncovered.

End of Cookie week

It's over! Cookies all packed up in cute little boxes and cupcakes were finished this morning. What an emotional roller coaster! I dropped lots of things today.

I found this project at work to be super frustrating. It felt like swimming against the current a lot of the time. I was in a kitchen full of people all hoping I would fail, so that they could take the cookies and cakes for themselves. We had to keep sending for more eggs because the staff would eat them all. Two dozen eggs in two days. I brought my own eggs and they ate those too. A hundred or so extra cookies and cakes weren't enough - it seems like the cupcakes barely made it!

I think that's why I so welcomed the help I got in the end, even if it did mean delaying the cupcakes and coming in early AGAIN. It was refreshing to have someone on my side for once - a life preserver in a sea full of sharks.

Endless Cookies

No fun photos today! Omg I'm exhausted for reals. So many cookies happened today. No disasters though I ended up with a lot of extras left over.

There was no time to take any photos during the process. I had to skip my lunch break. But yay, it's done and now we have to find a way to cram six cookies into one tiny little box.
